This week, I visited a couple of small businesses who are making a big impact in northern Minnesota.
Lucie Amundsen and her husband began Locally Laid Eggs – and, with the help of a Super Bowl ad, Lucie’s ability to get people to click on things, and chickens that fall asleep easily, Locally Laid has become a regional (perhaps national) phenomenon.
In Knife River, Ken Thiemann of Borealis Fermentery explained the process of building his facility from the ground up (no, seriously, from the ground up), staying true to his inspirations in Belgium, and how he makes it work despite being vritually a solo operation.
